Each province has a different kind. Also,
there are different kinds for each
season.

The
most famous food in Korea is kimchi. We
can't think of eating a meal without kimchi.
It is an essential food for us. There are about 190
kinds of kimchi. Each province has a
different kind.
Also,
there are different kinds for each season. For
example, in spring watery kimchi which we
call mool kimchi, and Chinese cabbage are
popular. In summer, young radish kimchi
which we call chong kak kimchi and cucumber
kimchi are common.
Whole
cabbage kimchi called tong kimchi (I
especially like this kind.) and radish
kimchi called altari kimchi are
common in autumn and winter.
Some
of the names used long ago for the original types
of kimchi are chimchae, chinjangá,
and chimjang.
The
original kimchi was just made of cabbage and
salty water, but today it includes many kinds of
ingredients such as red pepper powder, salt, sugar,
pickled fish juice, seasonings, and
seaweed.
