The Smellier, The Tastier

Minsoo Park of Korea

A good wife in Korea must be able to make the three following things: kimchi, soybean paste, and red pepper paste. These three things are basic foods in all Korean families. Unless a Korean family eats these three things, it cannot really be Korean.

What is surprising about these three foods is that all of them stink. The ingredients of Kimchi are Chinese cabbages and many kinds of vegetables. The cause of the stink of this delicious food is fermented, pickled sea foods, garlic and spring onion. The more fermented kimchi is, the smellier and tastier it is.

Soybean paste and red pepper paste are also fermented food. It takes at least several months for them to ripen completely. These foods have a stinky smell, but they taste very good, so a good Korean wife needs to learn the art of making all three.
